We normally use 2Cr14/3Cr14/2Cr13/3Cr13 to make the knife blades. Its hardness can be high up to 48-52 HRC and its thickness of sharp edge is made as thin as around 0.03mm.
Higher grade stainless steel such as 1.4116/5CR15MOV will also be used to made the blades which can obtain higher hardness of 52-58 HRC and longer duration of sharpness
